I have the Klipsch Quintet iii speaker set, along with a Klipsch 350 watt sub. Can anyone recommend a good 5.1 or 7.1 receiver? I'd love something with a built in eq that I can adjust, but not mandatory. I'm currently thinking about Denon. Thanks in advance!

The Quintet iii does not need too much power and cannot handle too much anyway. Since you are thinking about Denon and only need manual EQ, I recommend the AVR-1912. It is 7.1 so you have room to grow, has networking capbilities and Airplay. The only thing it has lacking is Audyssey XT as it has Audyssey multi EQ only, but you want to make adjustment yourself so that should fit your need perfectly. I have bought one recently and found its sound quality surprisingly good so ignore what those reviewers said, so of them are often influenced by price tags.
