very simple question, will the non-slim version of the ps3 output 7.1 soundtracks as 6.1 to my legacy receiver and will it output DTS 6.1 in 6.1 to my receiver?

Yes, it will output everything over HDMI as PCM, and if you have your optical port set to bitstream, then you can get dts es discreet 6.1, dolby digital ex, etc...

The receiver in question does not support HDMI, unless he got a new one when I wasn't watching.;)

If the DVD supports DTS-ES or Dolby Digital EX yes. If a Blu-ray supports 7.1, I'm not positive. I would think it would downmix to DTS-ES, but it seems like that could be too complex and it may go to base 5.1.

In terms of legacy, there is no such thing as 7.1 :) Prior to BD, everything was 6.1 only, 7.1 is a matrix decoding method. The PS3 will pass 5.1 core at a high bitrate: 1509K for dts, and 640K for DD. This is how I have mine because I don't have HDMI on my receiver either.

It works fine is what I am saying. I don't have a 6.1 setup at the moment however.
