I want to tinker with and compare the audio quality from my Samsung BD player using the 7.1 analog outs as opposed to HDMI. Will plain old L/R RCA patch cables work for this -- various that I collected in my audio junk box -- or should I get some better quality ones from monoprice.com or other?

Not to take away from Monoprice, but I'd vote for using the cables that you have around the house first. If you can't tell any difference between those and the HDMI connection, then there's no reason to buy any more cables.
