When I am recording material from a data DVD to a blank DVD, I get confused as to which is the source drive and which is the destination drive ...and which one does the blank disc go into? Sorry to be so obtuse!!

So which one should be the destination drive ,the DVD rom or the DVD R/RW?

The R/RW is the destination drive (where the data is going).

The DVD R/RW drive is the recorder. R='write once' media and RW='rewritable media'. The DVD rom drive is playback only so the the disc to be recorded goes in that one and the blank media goes in the drive with recording capability.
