Newbie Questions about Digital Coax

I am late to this game but am getting hooked fast.
I was told to hook up the DVD via digital coax directly to my HD TV with only the sound going through the Denon. Is this better than connecting it through the AV Receiver with Componet Video cables and why? What then is the purpose of an "AV" Receiver if I do not use the AV part.

Denon 1905, Sony DVD DVPNC875V, Polk Speakers, Sony HDTV KDF-60WF655, JVC Digital Recorder DR-MV5, Dish HD.

P.S. the Sony DVP-NC875V I need to replace soon as it is horrible.

Digital coax carries digital audio signals, not video. If you're running the digital coax to anywhere, it should be to your receiver. And since you do have a capable receiver, I would go ahead and use the video abilities and run the component video through the receiver.
