Greetings. I currently own an Onkyo TX-890 in a 2.1 setup, and I have to buy a new receiver since this one won't fit in my new console.

I would eventually like to set up a surround sound system but I mostly use my system for regular music, so if I purchased say, a Yamaha RX-V567 5.1 receiver and only attached two speakers (JBL S38), would my regular music experience be as good or better than the TX-890?

In other words, will 5.1 receivers double perfectly as 2.1 receivers? Thanks in advance for your help.

Yes to your question.

I use mine for two channel on the weekends when I'm cleaning or running on the treadmill.

It's perfectly fine.

I wouldn't go with a Yamaha till you get to the 667 model.

Follow up question

If I purchase the rx-Yamaha v667 and use it with only two speakers (JBL S38) for now, will it pump out as much sound and as good quality as my 125 watt per channel Onkyo TX-890 did? Don't you take a hit in quality since it's a 7.1 system being used in a 2.1 mode? Thanks.
