Hi!
-Rotate your whole setup 90 degrees, so the display is on a short wall. The interaction of room boundaries is very important! Do NOT absorb the first reflection points! Your room is NOT a recording studio! This will make your front sound stage sound vastly superior in terms of spaciousness and listener envelopment, and will make integration of ceiling mounted (not to be confused with IN-ceiling) surround speakers much less of a distraction for the pool players behind you.
-The best speaker in the world is only as good as the room/arrangement it is asked to perform in!
-Please provide a precise budget for speakers/subs. You've got a beautiful space to full with great sound. And Polk Audio is not going to deliver the HT experience you seek. Dollar for dollar, there are many great options out there that will trounce brick and mortar favorites like Polk and Klipsch.
-HT Subwoofers by nature are expensive. A good one requires a sturdy box, a big magnet, and an amp. I can promise you that no $400 sub is going to adequately pressurize your large space and give you the desired experience.
-What is the floor to be covered with?
-If you came to a site called Audioholics, you acknowledge we try to achieve the best possible sound in ANY configuration. Before you get your hopes up with some ridiculous 11 channel system(not that you have), realize that your overall experience may be better by starting with a high quality 2 ch system, and then adding to it as budget allows! (You've already got the receiver!) Quality sound is an investment that if acquired by an educated mind, can be enjoyed for decades! Don't let the marketing departments convince you otherwise!
