Need some help with my set up.

Okay, we are just moving in, and I am wondering if there is any way some one could help me with my home theater over the next couple of weeks.
The guy that lived there before either had his professionally wired, or knows what he is doing. Myself, well, I know how to hook up a tv and surround stereo, but, this guy had his way beyond that, and I would like to take full advantage of it.
Thankfully he has left every stitch of wiring in place, including high grade HDMI cables, all the Cat 5 cables, everything. I just have to get the components and put them in place.
When we get settled, I plan on doing a drawing of all the wires, where they are running and also a list of what I have so far.
I hope that some one may be able to help. If not, what would be my best bet? Best Buy (Geek Squad) or a home theater store? Have them come in and see what would suit the room?
Again, I really want to take full advantage of what this guy has done.

Here is the "short" of what I have.
I just bought a new HP computer about 6 weeks ago (it is still in the box, buried among other boxes, so I don't know the specs on that just yet). I have a 46 Sharp Aquos LCD TV (probably the best piece of electronics I own). And, I have an LG (in the box home theatre system)
As you may tell, I am not huge into the "home theatre" yet, but, I am sure that over time, I want to, and will build some thing nice.

I know for sure that I will need to purchase a projector (to make use of the screen that rolls out of the ceiling) and, I will have to purchase a tuner/amp in the near future.
I would really love to be able to stream from my computer to the projector/tv.
I am pretty sure that this place is wired for it, and should be possible, upon buying more equipment :)
