Need help on terminating pre-wires

I need a little advice wiring up my projector. My builder pre-wired a bundle of A/V cables from my entertainment area to ceiling. Here's what it looks like:

It looks like they gave me the standard "all-in-one" bundle (2 coax, RJ6 for telephone, cat5 for data) as well as 2 extra coax.

I'm thinking of terminating the 3 coax cables for component video, using the cat5 for VGA, and the RJ6 for S-Video. There's a nice thread at AVS forums on VGA over cat5, which includes this schematic. I assume S-Video is pretty easy.

Does this plan sound right?

How Hard would it be to ..

No it doesn't sound right at all. Yes you could mickey mouse it but why not do it right?
How hard would it be to pull new cable?
Use the old cable as the pull string?

Huh...

If you have three of the RG6 (Coax) going to the location where the video output will be then I would use the RG6 coax as a RGB but froget about the cat5 and cat4 for video, they work fine for networking and phone and control wires but not for video
