MKV to stereo? via PS3 or PC

I've been having troubles finding a decent solution for this...
I have a stereo setup at home currently and download alot of movies in the MKV format. I use a PC or PS3 (ps3 media server program)to stream the media, sometimes i find that there is no option for stereo in the mkvs. When listening to a 5.1 show in stereo you are obviously missing out on voices, etc. Is there any suggestions to actually get the 5.1 to stereo in a setup like this?

You don't need to do anything, if you have only a stereo setup and the track is 5.1 then it will be down-mixed to stereo if you set your ps3 or pc to stereo then it will downmix the channels from 6 to 2. That way you will have no problem.

If you use a receiver then it will automatically downmix to how many speaker channels you have. For example I only have a 3.0 setup so I disable the surrounds and sub in the receiver and it directs 5.1 audio to the correct channels by simply mixing the surrounds to the fronts.
