media room on a budget, could i save here?

I am new to all this. we have a large media room/game room. 20x34 (above garage). I have a quote for everything but my projector and L/R tower speakers (which i already have. they are epson 8350 & KEFQ3 towers) installed for $4200. It's a nice system (jamo surrounds and marantz sr6004 receiver, universal remote). We are not video/audiophiles so really just watch fball games and kids watch movies. I do not even own a CD or an IPOD. Here's my question:

Can i just go with a center channel and the two tower speakers for now? How would this effect the following:
*Fball games or TV (do they even use the surround system or just the center and towers?)
*Music (CD or radio, do they even use the surround system?)
*Movies i know it would driver the entire system

I could save $3200 by using older reciever and bypassing the "true cinema experience". I appreciate your comments on the above. I could later add the other pieces as money grew on the tree and it became more of a priority.

It sound like a/v installer is about to rip you off.
Skip "true cinema experience" ? Sounds like nonsense to me. You could have "true cinema experience" on budget, it's just matter of picking right components from right sources.
For your center, you must use matching KEF center, or loose any hope for the "true cinema experience" :D

So what exactly covers $4200 budget? (jamo surrounds and marantz sr6004 receiver, universal remote - even installed doesn't seem to cut it nearly enough)
I assume you already own screen and have it installed?
What about sub(s) - Large room like your's you most likely need at-least two of them (same make/model works best)

700 for labor seems a bit excessive, basically install of most stuff is pretty easy and UCR MX450 remote programming is done from PC - shouldn't be too hard.

I can't anything about the screen, good or bad - never heard this brand, not that I know if it was Steward Screens.
You should beg help of our in-house Projector expert - BMXTRIX
Regarding other items:

Your KEF speakers are pretty efficient so no reason to get very powerful amp for them. Other prices seem a bit high as well.
