Would there be a problem running HDMI and cable (coax) lines directly adjacent to a 12/3 Romex power line for a few feet? I'm guessing I'd be okay but I don't know for sure and it'll be too much of a PITA to test myself before I seal up the ceiling. Anyone have any experience? Thanks in advance.

I wouldn't. Running cables parallel to power wiring is the easiest way to induce noise and problems. If they must cross, do it at a right angle and keep them apart as much as possible- don't run them parallel for any more than a few inches. Usually, this matters more for analog signals but since you need to seal the ceiling, it would be best if you don't test fate. Also, it would be a good idea to use some kind of raceway in case you need to replace a cable in the future.

I had trouble running close to electrical wires. Thankfully I ran the complete setup before I sealed anything in my walls or ceiling. Rule of thumb for me is to stay way from electrical wires for audio and video cables... just asking for trouble.
