I would say get two subs anyway. Use the subwoofer crawl method to see where the best place is to place sub #1: this is where you place the sub in the listening position and then measure the sub's response with a calibration mic in possible locations it can be placed in. Use the spot with the flattest frequency response. Place sub #2 in the spot that fills in the biggest dips in frequency response from sub #1.
As for the side surrounds, I would place the speakers overhead facing down to the listening position. Keep them above anywhere where someone could hit their head from walking underneath. I think these
JBL 8320s are really good for that application. You can mount them high and out of the way. They are sensitive speakers and with an 8 ohm resistance. They are also THX certified, in fact, they are the least expensive THX certified speakers on the market. That means they are extremely high bang-for-the-buck speakers. $500 will get you a pair.
