HDMI plus composite RGB

If you connect both an HDMI cable and the composite RGB cables from the receiver to the TV, does one override the other or what? I guess it may not matter, I was just curious.

Whether the receiver will output signals over both connections may depend on your receiver. For the TV, though, it shouldn't be an issue - you would just select different inputs on the TV. The HDMI input on the TV should be one input choice on the TV's menu (also on the remote control, probably), and the RGB input should be another input choice.
