HDMI Into Television, Optical and Analog Audio Out?

Hi There, first time poster! Go easy on me haha.

I have a Toshiba Regza 52" panel (model #52XV645U), which has HDMI inputs and both an optical digital audio out as well as analog RCA audio out.

Currently, my A/V sources are input to the television via HDMI (Wii U, Xbox One, Digital Cable Box). The sound is output via optical audio out from the television to my receiver (a Sony STR-DE597 - old model, no HDMI switching or anything like that), the input on the receiver is "Video 2".

I have acquired a set of wireless headphones, which only have as an input RCA stereo analog.

My question is: Can I output both digital and analog audio at the same time from my panel to the receiver via digital and then to the headphones via analog? Or, alternatively, can I output analog audio out from the receiver from the digital input from the television?

You can't do the former, but the latter should work from the headphone jack.

Just be aware that plugging into the headphone jack will likely disable output to your speakers. You can use one or the other. To use both simultaneously, I think you need a Zone 2 on your AVR. Your wireless headphones probably take a pre-amplified signal, (mine do), like most Zone 2 outputs.
