You will want to use a digital connection for the DVD to pre/pro at the very minimum as that is the simplest and best way to get "true" 5.1 surround, as well as 6.1/7.1 when you're ready for that. Do not use the R&L stereo outs because you will only get, yep you guessed it: stereo. Another way would be if your player has multichannel analog outputs, you could connect all of those (you'll likely have to if it does DVD-A and SACD unless it and your player have firewire), but the pre/pro almost always has better bass management than the player for DVD movies.
I am not familiar with those cables, but I'd say you should try them out and see if they work. Analog cables may or may not work for a digital connection, so try it and if it works, you're good to go. Make sure you have enough connections for the amps first...
