I have a single cable management channel attached to the wall behind the TV, is it OK to bundle a digital optical cable with the TV's AC cord?

The power cord cord shouldn't interfere with fiber optics. I've never heard of this, at least.

The power cable will do nothing to the optical cable.

Power cables also rarely impact HDMI over short runs since HDMI is entirely digital. That may be up for some debate, but generally speaking, is also true. Certainly fiber and electrical have zero interaction though.

It's not a wire, it's plastic, like fishing line.

True, but HDMI cables can emit lots of crap that causes problems for other devices, like RF remote control hubs.
