Since I embraced low carb two and a half years ago I have been able to fully indulge the Swerdlow stinky cheese gene (Swerd doesn't have it). Lately smoked Gouda with bacon. Mmmmm bacon. Maybe we need a bacon thread....

cheeze fun fact #1098 The term "big Wheel" and "big cheese" as in "he is a big wheel" or "he thinks he is the big cheese" originally referred to those wealthy enough to purchase the entire wheel of cheese at market vs. less wealthy people who bought just a piece at a time...

Cheese fun fact #9833 Americans buy around 40 Billion dollars of cheese per year and there are 440 licensed cheese makers in all of America...

We were out there three years ago this Sept for a small Audioholic's GTG in Lincoln City.
Went to Tillamook also. Did the tour and had their ice cream.
Beautiful area, and really nice AH members and people in general. It didn't hurt that the Rogue brewery was in Newport either.:D Along with some of the best seafood we've ever had.

I like Tillamook cheeses because they don't use animal rennet. Well, that and it's really good cheese. I didn't know they had ice cream

I didn't know they used non-animal rennet. Just looked it up, they went vegetable based, rather interesting.

Looks like they do use traditional animal based for their white cheddars though.
