This place makes some of my favorite cheeses. Swissland Cheese Company 260.589.2671 My very favorite is the grass fed baby Swiss. It pairs well well with a just ripe, but still firm pear and a nice Riesling.

We were out there three years ago this Sept for a small Audioholic's GTG in Lincoln City.
Went to Tillamook also. Did the tour and had their ice cream.
Beautiful area, and really nice AH members and people in general. It didn't hurt that the Rogue brewery was in Newport either. Along with some of the best seafood we've ever had.

I didn't know they used non-animal rennet. Just looked it up, they went vegetable based, rather interesting.

Looks like they do use traditional animal based for their white cheddars though.
