Are Mono blocks only for subs? Or possibly individual speakers?

Or can they be run in series to say, 2 speakers each? Not the ideal way to go I'd imagine.

I'm looking to buy an amp(s) and a local guy has some Marantz MA500's for sale.

I want to have up to 6 pairs of speakers throughout the house for music only, no dedicated sub.

You absolutely can use those Marantz MA500's to power individual speakers. Many people do that. You need the correct audio inputs (e.g. pre-outs on a receiver), of course. It's just instead of a having a multichannel amp where you connect multiple speakers to a single box, you'd have an amp box for each speaker.
