Hello all
My brother started making a very hot, but very flavorful hot sauce about six years ago.

That started me getting into trying different hot sauces.
I don't like sauce that's hot, for the sake of being hot, but lacks any real flavor.
I'm always on the lookout for a hot but tasty sauce.

This link is a place that's near where I live, and has some tasty stuff. http://extremefood.com/shop/home.php?cat=1

Anyone else like hot sauce?

I love spicy food.

Last time I made chili there was something like 40 dry/fresh chilies turned into a sauce which was mixed with beef broth for the base. Add some tomato, garlic, onion and spices with nice chunks of beer and you have a delicious chili which few can eat :).

I also always try to keep fresh made salsa on hand.

I made some very spicy crab rangoons yesterday actually. Mmmm...

Hi Jamie, I like Sriracha too, and love Thai food.
I went with my brother for Thai this weekend after doing a side job.
They served us a tray with little jars of different hot sauces, and one with a dark red powder.
It tasted great and was nice and hot, I had it with a whole fish.
I woke up sweating around two in the morning.:D

I like spicy foods, but they sure don't like me. :D:eek::D I even take the purple pill every day too. Even so, spicy foods give me way too much heartburn/acid reflux. Red peppers seem to cause me the most trouble. ;):);)

Cheers,

Phil

Hi Phil,
Are you sure you're not mixing up the blue pill with the purple pill?:D

They are very easy to make and freeze well.

Spicy Crab Rangoons

1lb cream cheese
1/2 bunch green onion, diced
2-5 tbsp Sriracha, to taste
1-2 tsp garlic powder, to taste
8oz-12oz imitation crab meat*
salt, to taste

1 package won ton wrappers

Canolla oil for frying

*I typically don't like this stuff, but there is no reason to use real crab meat in this dish.

Let the cheese sit out for a little while so it is softer and easy to mix. Mix together all the filling ingredients thoroughly. Place a tablespoon size lump of the mixture on each on the won ton wrappers and fold however you want (use water as sealant). Once folded, lay flat on a cookie sheet or plate and refrigerate for 30 minutes. Heat up some oil (350-375* F) and fry them until golden brown. Drain on a paper towel and eat up.

When I am really lazy, I will use a small saucepan and pour about 1/2" of oil in it, frying one side then flipping it over and frying the other.

Regardless of the method you use, avoid over filling the pan. You don't want the temperature of the oil to drop too much, if it does they won't be as crispy.

If you want to freeze them, after they have been cooled in the fridge, transfer (while still on a plate/cookie sheet) to the freezer for another 30 minutes to an hour. Once they are solid you can toss them in a bag. They can be fried directly from the freezer without a problem.

Be sure not to have them touching when you put them in the fridge/freezer because they will stick together.

More pics!

I have to use real crab I cannot stand that stuff. I grew up on the Chesapeake Bay and I was a blue crab eater since birth. I do however like your recipe Andrew and will most likely try it soon........

If you can get it cheap, go for it, but I doubt you will get much flavor from the stuff. I include the fake crab (or fish as it is) mostly for texture and a subtle sweetness.

Had a clam chowder with hot sauce today. Sounded disgusting when my friend first suggested it, but I don't eat chowder without it now.

I love the Hot sauce especially when I'm hittin the sauce ;) go's together like bread and butter, I also will give Andrews recipe a try sounds like a great snack.
We should share Hot recipes, I really like to concoct hot and spicy on the bbq, just made hot wings on the grill over the weekend I think the recipe was from http://BBQU.net I took a large portion of wings soaked them in Whole Wheat beer for four hours , drain em off place in large bowl, mix up equal amounts of salt pepper paprika and chili powder, about 1.12 oz of each , it's the size of the chili container ,sprinkle this mixture all over the wings place in the center of the barbecue skin side up only turn on the outside burners leave the middle off and let em cook, now go make your favorite hot sauce to pour all over em.I also filled a foil pan up with wood chips that I soaked in salt water for a few hours that I placed over the high heat for that smoked taste umm really worked out well.

I am a fan of hot/spicy foods. Did you notice my avatar? It is from Kilt Lifter hot sause. It is hard to find now and may not be made any longer.

I'm a big chipotle fan. We go through at least 2 bottles a month of the tabasco brand.

I love good spicy food! I make pico de gallo, and gaucamole that I like to spice up quite a bit.

I agree with the OP on the fact that it needs to be a flavorful heat :D

If it didn't make you sweat, it wasn't worth it! ;) It's good to see others who like it hot.

I basically cook all my foods in a southwestern style. I've taken to adding a bit of honey to my hottest foods (which are probably hotter than most of you would like). The natural sweetness seems to better bind the aromatic spices and flavorful ingredients to the heat of the capsicum. Give it a try sometime.

I've been trying to tone down the heat when I cook but I keep ending up with really spicy stuff. I've been leaving the Dave's Insanity Sauce in the fridge and making do with serrano peppers and chipotles. Still, I use 6 serranos (with the seeds left in) to a pound of meat and the result is fairly hot.

I also have my own southwestern spice blend that is fairly spicy. I basically took Emeril's recipe and replaced the cayenne and pepper flakes with a chipotle and a couple of dried habaneros powdered in an old coffee mill.

I find Sriracha sauce works great on eggs. I prefer it to Tabasco sauce.

My favorite stuff is based of the Habenero. It's a very flavorful delicious chile. A great example of a well done Habenero sauce are the Mango Habenereo wings at Buffalo Wild Wings. Those great wings.

Thai food is fantastic. The best spicy Dish is called Som tom and is served by street vendors throughout thailand. It's a very spicy green papaya salad served with a plate of greens and a bag of sticky rice. There are 2 levels I get depending on my mood. Hot or Thai Hot. Basically there is a scale of how many thai chiles are added. Up to 10 being the hottest. It is best eaten with friends and you must not stop until you complete the dish. If you stop you will be on fire. If you keep going you will survive and enjoy the dish. The key is to keep going.

I love spicy food my grandpa used to grow jalepenos and cayennes. Nothing like sitting down in the old days and eating a cayenne pepper with an entire meal. Or a fresh jalepeno with a taco.

I love that Sirracha stuff. It's simply amazing. I don't cook anymore though and my fiancee can't stand the heat.

Sounds like it is time to move on... :p;)

Jill could not eat spicy food when we first started dating, didn't stop me from cooking it. She just learned to eat spicy, now she is like me (to a lesser degree) and doesn't think most spicy food at restaurants is spicy - so when most people are complaining it is too hot, she gets more :D.

Seriously, I have no life.
I like to cook Indian food, even though it is a lot of work. That was one of the big reasons I put in an outside kitchen here. That outside kitchen has a lot of space and BTUs. Meal preparation can become a big family affair, and often neighbors involved also.

Some of our most memorable summer weekends have involved a big Indian meal with the many family members involved, including making the Naans from scratch

I'm getting in the mood for Saturday.
