I'm not sure if I'll do it, but I'd like to know how anyway. If the receiver only has one sub out, what do you do? Can you just get a RCA cable with double females on one end and split the signal? Will the signal be strong enough to run both subs?

That's exactly what you do. There is plenty of signal strength.
