I have speaker settings (large/small) for both the Denon DVD 3910 and my Bryston 1.7, I set up the 1.7 (front large, center small, rears small...) but what should the setting be on the 3910 all large? or do I match the processor's settings?

On your DVD player I would set all your speakers to large and let your Bryston 1.7 do the work.

Yep! All large. You may find this article helpful: http://www.audioholics.com/techtips/setup/avhardware/audiovideosetup.php

Those setings should only affect analogue outputs from your DVD player. So unless your receiver does bass management on the analogue inputs I would suggest setting them identically to your receiver. This is assuming you are using the DVD-3910 for SACD and DVD-Audio only via the multi-channel analogue outputs.

Interesting. I have a Yamaha S-840 DVD-A player and a RX-V1400. Should I set my player the same as my receiver? I had set all speakers to large on the dvd following Audioholics bass management advice.

I just happenned to be fooling around with my DVD settings one day when listening to a CD/ DVD Audio ...i switched from large to small on the DVD player and I have to say it was night and day. 100% improvement in the bass department. Blew me away. I have my Denon 3805 set to small for my fronts too even though I have tower speakers with a power amp on the lows..

however, I am still using a Panny...the Denon I am sure is better and different with its settings as you can control bass crossover frequency, I can't.. But from what I have read, the bass is pretty much non existant with analog if you leave your DVD speaker settings at large.
